【摘要】:ThisInternationalStandardspecifiesrequirementsforafoodsafetymanagementsystemwhereanorganizationinthefoodchainneedstodemonstrateitsabilitytocontrolfoodsafetyhazardsinordertoensurethatfoodissafeatthetimeofhumanconsumption.Itisapplicabletoallorganizations,regardlessofsize,whichareinvolvedinanyaspectofthefoodchainandwanttoimplementsystemsthatconsistentlyprovidesafeproducts.ThemeansofmeetinganyrequirementsofthisInternationalStandardcanbeaccomplishedthroughtheuseofinternaland/orexternalresources.ThisInternationalStandardspecifiesrequirementstoenableanorganizationa)toplan,implement,operate,maintainandupdateafoodsafetymanagementsystemaimedatprovidingproductsthat,accordingtotheirintendeduse,aresafefortheconsumer,b)todemonstratecompliancewithapplicablestatutoryandregulatoryfoodsafetyrequirements,c)toevaluateandassesscustomerrequirementsanddemonstrateconformitywiththosemutuallyagreedcustomerrequirementsthatrelatetofoodsafety,inordertoenhancecustomersatisfaction,d)toeffectivelycommunicatefoodsafetyissuestotheirsuppliers,customersandrelevantinterestedpartiesinthefoodchain,e)toensurethattheorganizationconformstoitsstatedfoodsafetypolicy,f)todemonstratesuchconformitytorelevantinterestedparties,andg)toseekcertificationorregistrationofitsfoodsafetymanagementsystembyanexternalorganization,ormakeaself-assessmentorself-declarationofconformitytothisInternationalStandard.AllrequirementsofthisInternationalStandardaregenericandareintendedtobeapplicabletoallorganizationsinthefoodchainregardlessofsizeandcomplexity.Thisincludesorganizationsdirectlyorindirectlyinvolvedinoneormorestepsofthefoodchain.Organizationsthataredirectlyinvolvedinclude,butarenotlimitedto,feedproducers,harvesters,farmers,producersofingredients,foodmanufacturers,retailers,foodservices,cateringservices,organizationsprovidingcleaningandsanitationservices,transportation,storageanddistributionservices.Otherorganizationsthatareindirectlyinvolvedinclude,butarenotlimitedto,suppliersofequipment,cleaningandsanitizingagents,packagingmaterial,andotherfoodcontactmaterials.ThisInternationalStandardallowsanorganization,suchasasmalland/orlessdevelopedorganization(e.g.asmallfarm,asmallpacker-distributor,asmallretailorfoodserviceoutlet),toimplementanexternallydevelopedcombinationofcontrolmeasures.NOTEGuidanceontheapplicationofthisInternationalStandardisgiveninISO/TS22004.
